Kids love the crispy edges and the tender inside as they are similar to chicken nuggets but with amazing flavor in every bite.

- Boneless chicken breast: Use fresh chicken breasts, chicken thighs or even ground chicken.
- Breadcrumbs: Great to bind the chicken mixture together.
- Panko: The key to a crispy chicken patties.
- Onion: adds flavor to the chicken mixture.
- Eggs: chicken patties are dipped into the egg mixture first.
- Flour: egg covered patties are dredged into the flour.
- Mozzarella cheese: adds cheesy flavor and helps binds the patties.
- Garlic: garlic powder is added to the flour mixture and minced garlic to the chicken mixture.
- Parsley: adds flavor and color to the chicken patties.
- Cardamom: just enough for a unique flavor to the chicken mixture.
- Salt and pepper: added to bring out the flavor of ingredients.
🥄 Instructions
- Cut chicken into cubes and process in your food processor.
- Place ground chicken in a bowl then add the rest of the ingredients and mix well.
- Lightly beat eggs in one shallow bowl. Mix flour with garlic powder in another bowl. Place panko breadcrumbs in a third bowl.
- Take about ¼ cup of the patty mixture and shape with the palms of your hands into a disc.
- Dip into the bowl with flour then eggs.
- Then dip into the dish with breadcrumbs. Place chicken patties on a baking sheet and continue with the rest of the chicken mixture.
- Heat ½ inch of vegetable oil in a frying pan on medium then fry the patties on each side until golden brown.
Air Fryer Instructions
- Preheat air fryer to 375° F , place patties in air fryer basket and air fry for 5 minutes each side.

- To cut the time, you can use ground chicken.
- Chicken breasts and chicken thighs work in this recipe so you can use either or a combination.
- I've used two kinds of breadcrumbs. Normal breadcrumbs to bind the chicken patties and panko breadcrumbs for more crisp patties. You can use normal breadcrumbs for the outer coating as well, it just won't be as crisp.
- Use any spices you like in this recipe. You might want to make the recipe as it is and then venture out and add your own.
⌛ Make Ahead
Make the chicken patties ahead of time easily. After shaping and coating the chicken patties, place on a baking sheet lined with parchment paper and freeze until hard. When they are hard enough place in an airtight container or freezer bag and freeze. Good for 4-6 months.

- These chicken patties work very well as chicken burgers. Place in burger buns with lettuce, onions, lettuce and your favorite sauce. Work as well with any side dish like pasta dish, rice or a salad. Great with any dipping sauce too.

Crispy Chicken Patties
Equipment
- food processor
- 4 various sized bowls
- frying pan or air fryer
Ingredients
- 2 lbs chicken breast about 3 large
- 1 small onion minced
- 2 cloves garlic crushed
- 1 cup parsley chopped
- 1 ½ cup breadcrumbs regular
- ¾ teaspoon salt or to taste
- ½ teaspoon black pepper
- ½ teaspoon cardamom ground
- ¼ teaspoon cayenne pepper optional
For the dipping and frying:
- ½ cup flour with a dash of salt and pepper
- 2 cups panko breadcrumbs
- ¼ teaspoon garlic powder
- 2 eggs with a dash of salt and pepper
- oil for frying
Instructions

I hope you have a wonderful time with your parents. Jetlag is tough. I do find that keeping a normal schedule and try to get some sunlight on the backs of my knees. I don't know why but I read that somewhere and it worked for me. It does something to the internal clock.
