I’m Amira Ibrahim a blessed wife to a very kind hearted man and mother of three precious gifts from God (Hassan 2003, Abdel Rahman 2005 and Galal 2010). I am from the charming sunny Egypt, sister to 2 other girls and daughter to the kindest parents ever.
My Journey
I am a middle eastern Mediterranean girl. I was married and had my first two children in Egypt. We moved to the states almost 6 years ago. I’ve seen how different the middle eastern culture from the American one in some points and how you can never tell the difference in others.
In the Arab world there is a certain image of the Americans and I believe the same here too regarding the Arabians. These images we have building up through movies and media of all kinds.
I’m here to try to correct that image. I’m here to represent the Arabian culture, tradition and world for you. To give you a better understanding of the middle eastern I will let you in our daily life as an Arabian family living in the US. I hope to give you a true image through my cooking, struggles, fears , marriage life, thoughts, crafting, shopping trips and even couponing …. my life as a whole.
I believe that we may be different in appearances and some cultural backgrounds but the inner persons we represent are very much alike.
I relish life, I like keeping it simple. From the time I wake up to the moment I go to bed I hope to squeeze every drop and every bit of flavor out of everyday. I love my family, my husband and above all I love my Allah and hope to please him every step of the way.

About Amira, founder of the NiletoRockies cuisine:
I was born in Saudi Arabia, raised in Egypt and now calls Colorado Home.
I was graduated from the Faculty of Engineering, Cairo university and worked all my life as a programmer. I’ve lived my past life - that is until 2007 - with a keyboard in one hand and a mouse on the other. I had little to no experience in the kitchen and I was not even interested.
Why NiletoRockies cuisine?
After moving to the US, I had both cultural shock and taste buds shock. I’ve overcome the cultural one but still suffering from the kitchen one o_o.
My kids- 3 boys, I know I know poor mama- only want Kraft’s mac and cheese and donuts for dinner each night!!!. I needed to do something about that so shifting from amiraspantry to NiletoRockies cuisine was a must, as I’ve changed my goals.
So, hop on the food cruise as it sails from the Nile valley with all the delicious recipes, from the Middle East and the Mediterranean, to the Pacific ocean, and take the healthy train with me as we stop at the Broncos fan club.Let me share my culture, stories of food, good and bad memories with you through my kitchen journey.
