Okra Stew (Bamya)

I made this recipe last week for the family when someone suggested they  wanted to have okra. Even the little one, who is a notoriously picky  eater, liked it!

INGREDIENTS

Okra Garlic Coriander Tomato sauce Olive Oil Onion

In a deep pot boil lamb or beef cubes until done. Check post for detailed instructions.

Step 1

Heat olive oil add onion, garlic, and coriander. Sauté for about 2-3 minutes then add chopped cilantro and jalapeño peppers.

Step 2

Mix in the okra and tomato paste. Keep stirring until tomato paste is well distributed.

Pour in tomato sauce, broth salt and pepper. Bring to a gentle boil then reduce heat and simmer for 20 minutes.

Step 4

Add in cooked lamb cubes, stir to combine, and continue cooking on low until okra is tender.

Step 5

Meanwhile, make the garlic topping by heating  oil then add garlic, coriander, cilantro, and chili peppers. Saute  then add 1/2 to the stew.

Step 6

Ladle in serving bowls topped with the remaining garlic and cilantrol relish.
