Mint Simple Syrup

Refreshing and bursting with flavor concentrated mint infused simple syrup recipe that is great for hot and cold drinks. Perfect to add to your frozen treats as well and a great way to use all those mint plant growing in the summer months.

Ingredients

  • 2 cup fresh mint leaves, chopped
  • 1 cup water
  • 2 cups sugar
  • 1 teaspoon lime juice
  • green food coloring optional

Instructions

  • In a small saucepan over medium high heat, add water and sugar together.
  • Stir to dissolve sugar a bit and wait for the mixture to come to a boil.
  • When the mixture comes to a boil add in the chopped mint leaves. Bring the mixture. back to a boil, then reduce heat and cover. Let it simmer for 10 minutes.
  • Let the mixture cool down completely then blend.
  • Pour the mixture through a fine sieve lined with cheesecloth back into your pot.
  • Add lime juice and green color if you like.
  • Simmer for 10 more minutes skimming foam that gets to the surface.
  • Turn heat off and let it cool down then pour into glass containers.

Notes

To use:
  • Use to sweeten hot or cold tea.
  • Make Iced drinks on hot days.
  • For your mojitos or any mocktails/cocktails.
  • Add to club soda for a refreshing drink.
  • Add a touch of mint to your cocoa drink.
 
To store:
  • Store in the refrigerator for up to 1 month.
  • You can pour into ice cube trays and store in the freezer for 3-4 months.
 
Tips:
  • When using the mint leaves, it is not necessary to pull the leaves from the stems before mixing in the simple syrup. Just a rough chop is all that is needed.
  • The hint of lime and green food coloring is optional.
