Keto Stuffed Peppers

A stuffed bell pepper recipe that is suitable for keto and low-carb diet. A great way to get dinner on the table with low carb count.

Ingredients

  • 2 Tablespoons oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 pound ground beef
  • 1 Tablespoon tomato paste
  • ¾ - 1 teaspoon ground cinnamon
  • ¾ - 1 tsp dry oregano
  • ½ teaspoon black pepper
  • ½ teaspoon salt or to your liking
  • ½ teaspoon red pepper flakes optional for heat
  • 6 bell peppers cored and top removed
  • 1 cup colby cheese shredded

Instructions

  • In a non-stick pan over medium heat, add oil then sauté diced onions for 2-3 minutes or until translucent.
  • Add garlic and continue to sauté for another 30 seconds.
  • Add ground beef and brown all over breaking it apart as it cooks.
  • Mix in tomato paste, and all the spices. Continue to cook for another minute then turn heat off.
  • Taste the ground beef mixture and adjust seasoning as needed.
  • Preheat the oven to 350°F.
  • Wash and core the bell peppers removing the seeds and white ribs.
  • Fill the bell peppers with the meat mixture, and place in an oven safe dish.
  • Cover with aluminum foil and bake for 20 minutes.
  • Remove the dish from the oven, uncover and top each one with shredded cheese.
  • Return to the oven until the cheese melts and slightly browns.

Notes

  • You can use any type of bell peppers you like.
  • You can also top the peppers with any shredded cheese you like or sliced cheese.
  • If you want to use less ground beef or your bell peppers are huge, you might add a cup of cauliflower rice to the meat mixture or you can also cook diced mushrooms with the meat.
  • You can also substitute ground turkey, chicken or lamb for ground beef if preferred.
  • Cut your bell peppers lengthwise, if they are bigger than average size.
