- 2 lbs Roma tomatoes
- 3 Tablespoons olive oil
- 1 teaspoon salt or to taste
- ½ teaspoon black pepper
- 2 cloves garlic minced
- 2 teaspoon fresh rosemary chopped
- 1 Tablespoon fresh basil chopped
Wash and cut tomatoes lengthwise.
In a medium bowl combine all the ingredients except for the tomatoes and mix well.
Add the tomatoes and toss to combine.
Preheat the oven to 450°F.
Place the tomatoes on a rimmed baking sheet and bake in the center of your oven for 25-30 minutes until completely done.
Place in mason jars and cover with a thin layer of oil.
- Any tomatoes will work for this recipe, plum tomatoes are the best choice as they make the most tasty sauces.
- This recipe is excellent when you have a lot of summer tomatoes in your garden, there is a ridiculous sale on tomatoes in your area or to pump up the flavor in winter tomatoes.
- Use it to take your pasta sauces to the next level.
- If you do not like a strong garlic presence you can simply leave the garlic cloves whole and roast them with the tomatoes, place in the jar with the tomatoes to give a faint aroma. Discard when using tomatoes.
- To Store:
- Refrigerate in an air-tight container for up to 2 weeks or freeze for up to 4-5 months.
