Besbes Cake
Moist semolina and flour cake easily done using your kitchen blender. A kid friendly recipe that is great for gathering and pot luck.

- 1 cup semolina
- 1 cup milk
- 1 cup all purpose flour
- 1 cup finely shredded unsweetened coconut flakes
- 1 tablespoon baking powder
- ¾ cup granulated sugar
- ½ cup oil- light tasting oil like canola, vegetable or avocado.
- 2 large eggs
- 1 teaspoon vanilla extract
Optional for more flavors and garnish:
- A dash of cardamom powder - I did not add that.
- Crushed nuts or coconut flakes for garnishing.
For the Simple syrup
- 2 cups granulated sugar
- 1 cup water
- 1 teaspoon vanilla extract
- ½ teaspoon lemon juice
Make the syrup:
In a sauce pan over medium heat combine syrup ingredients until it starts bubbling.
Reduce heat to medium low and let it simmer for about 10 minutes.
Remove from heat and let it cool down completely.
Make the cake:
Spray a 13x9 baking pan with baking spray or grease with butter then dust all the surfaces with flour.
In your blender, add eggs, sugar, milk, oil and vanilla.
Mix until they are all blended well together.
Add the semolina and continue to mix.
In a separate bowl sift together flour, baking powder. Add coconut and combine well.
Spread in the baking pan and let it set for about 10 minutes or until you preheat your oven to 350F.
Bake until golden brown- about 30 to 40 minutes- then pour your cold syrup on it while it is hot.
Garnish with more coconut faces and serve.
