Banana Applesauce Muffins

Ingredients

  • 3 ripe bananas
  • 2 large eggs
  • ½ cup applesauce
  • ¼ cup maple syrup
  • 2 Tablespoons olive oil
  • 1 teaspoon vanilla
  • cups whole wheat flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon cinnamon
  • ¼ cup old fashioned oats
  • ¼ teaspoon salt
  • cup sugar
  • cup chocolate chips optional, feel free to use more

Instructions

  • Mash bananas in a large bowl.
  • Preheat oven to 375F and line a 12 cup muffin tin with muffin liners.
  • Add in all your wet ingredients. (Eggs, applesauce, maple syrup, olive oil and vanilla). Stir to combine.
  • Combine dry ingredients. (Flour, baking soda, baking powder, cinnamon, oats, salt and sugar). Stir to combine.
  • Gently fold your dry ingredients into the wet ingredients.
  • Mix to combine but do not over mix.
  • Fill muffin cups ¾ of the way full.
  • Bake for 15-18 minutes, or until golden at the top.
  • Allow muffins to cool on a rack in the muffin pan for 5 minutes.
  • Take them out of the muffin pan and allow them to finish cooling on a wire cookie rack.

Notes

  • Enjoy with peanut butter, butter, plain and with coffee or tea. These muffins make a great addition to the kids lunch boxes.  I like to add in chocolate chips but you can also add in any kind of chopped nut for protein.
  • If you decide to use the chocolate chips you will fold them into the batter once the wet and dry ingredients have been combined.
  • Make sure you bananas are very ripe for this recipe to get the best flavor, plus they are easier to mash.
  • For this recipe, I used square dark chocolate pieces but you can use any kind of chocolate. 
  • Make banana applesauce muffins in a mini-muffin tin to make smaller muffins for younger kids. Note that using a mini-muffin tin will mean they will cook quicker in the oven.
