Mash bananas in a large bowl.
Preheat oven to 375F and line a 12 cup muffin tin with muffin liners.
Add in all your wet ingredients. (Eggs, applesauce, maple syrup, olive oil and vanilla). Stir to combine.
Combine dry ingredients. (Flour, baking soda, baking powder, cinnamon, oats, salt and sugar). Stir to combine.
Gently fold your dry ingredients into the wet ingredients.
Mix to combine but do not over mix.
Fill muffin cups ¾ of the way full.
Bake for 15-18 minutes, or until golden at the top.
Allow muffins to cool on a rack in the muffin pan for 5 minutes.
Take them out of the muffin pan and allow them to finish cooling on a wire cookie rack.
