Ground Beef Doritos Casserole
Put those ground beef into amazingly good use and make this easy ground beef Doritos casserole. A family favorite, kid friendly TexMex weeknight dinner that everyone will enjoy.

- 1 Tablespoon oil
- 1 medium yellow onion diced
- 2 pounds ground beef
- 2 packets taco seasonings
- 1 can Pinto beans 15oz
- 2 cans Rotel tomatoes 10oz each
- 1 cup sour cream
- 2½ cups shredded sharp cheddar
- 1 bag family size Nacho Cheese Doritos lightly crushed
Optional toppings:
- lettuce shredded
- pickled jalapeños
- sour cream
- guacamole
- cilantro
- Pico de gallo
Preheat oven to 375°F.
In a large skillet over medium heat add oil then sauté onion until translucent.
Add ground beef, break apart and keep stirring until it browns all over. Drain excess fat.
Mix in taco seasoning, both Rotel cans and beans.
Remove from heat and mix in sour cream.
Lightly spray 3qt baking dish and add 2 cups of Doritos and spread evenly to cover the bottom of the dish.
Spoon half of the meat mixture over the chips and top that with a cup of the cheese.
Follow with a layer of Doritos then the remaining meat mixture then a cup of cheese.
Top with the remaining Doritos and sprinkle the rest of the cheese over.
Lightly spray a large piece of foil and cover the dish.
Bake for 30 minutes covered then uncover and bake for about 7-10 more minutes.
Serve with your favorite taco toppings.
- Open the Doritos bag then fold the top and crush them lightly with your hands, do not over cursh them until they are turned into a powder.
- We lover our Doritos casserole extra beefy but you can lower the cost of this dish by using only 1 pound of ground beef.
Variation:
- You can make this casserole with any ground meat you like.
- Use any Doritos flavor you have on hand.
- Add different sorts of beans, such as black beans.
- Pour in a can of cream of chicken soup if you do not have sour cream or are looking for a more creamy dish.
- Add more veggies to the meat mixture.
- You can use Monterey jack cheese in place of cheddar if you wish.
Storage:
Store leftover Doritos Casserole in an airtight container and refrigerator for up to 3 days. Reheat in the oven.
