- ½ cup tahini paste
- ¼ cup warm water more or less depending on the consistency you like.
- ⅓ cup freshly squeezed lemon
- ¼ teaspoon garlic powder
- ½ teaspoon salt or to taste
- ½ teaspoon coriander
- 1 Tablespoon cilantro chopped
In the bowl of a mini food processor add all the ingredients.
Pulse until everything is mixed well and cilantro is finely chopped.
Taste to adjust seasoning.
- It helps to add water and lemon juice to the food processor before adding the tahini so it does not get stuck to the bottom of the bowl.
- For a thicker consistency start by 2 Tablespoons of water and add little by little until you reach your desired consistency.
- If you end up with a thinner consistency than you would like to add a little but more tahini paste.
- I’ve doubled the cilantro as this is how we like it, so feel free to double or even triple.
- Storage: Store in an airtight container/jar for a week in the refrigerator.
- Variations: Make it your own and use your favorite fresh herbs like parsley, chives, dill … etc
