Cut loaf into 1 inch cubes and set aside.
Spray a 9x13 casserole with oil spray and set aside.
In a small saucepan add butter and brown sugar, melt over medium heat and mix well.
Add brown sugar mixture to the bottom of the casserole dish top with pie filling.
Place cubed bread on top.
In a large bowl, whisk together eggs, milk, vanilla, cinnamon and brown sugar.
Pour custard mixture over and cover with plastic wrap.
Let it soak for 30 minutes to 1 hour in your fridge. You can leave it overnight too.
Preheat your oven to 350°F.
Take the casserole out and remove the plastic wrap.
Cover loosely with foil and bake for 40 minutes in the middle of your oven.
Uncover and continue to cook for another 15-20 minutes or until nicely browned at the top and bubbly.
Sprinkle top with powdered sugar or serve slices with syrup and fresh fruits on the side.
