Hula Pie

A delicious dessert originated from Hawaii, this is a Duke's Hula pie copycat recipe made easy at home.

Equipment

  • 9 inch pie dish
  • mixing bowls
  • 1.5 QT mixing bowl
  • Plastic wrap

Ingredients

For the crust:

  • 2 cups Oreo cookies about 20-22 cookies
  • 3 Tablespoons unsalted butter

For the ice cream dome:

  • 1 tub French vanilla ice cream 1.5qt
  • 1 cup toasted macadamia nuts roughly chopped plus more for garnishing
  • 2 teaspoon coconut extract

  • Make the whipped cream and refrigerate.

Make the ice cream:

  • Take your ice cream out of the freezer and put it on the kitchen counter for 15 minutes to let it soften.
  • Place ice cream in a big bowl, add chopped macadamia nuts and coconut extract and mix everything well with a wooden spoon.
  • Line an 8 inch (1.5 QT) mixing bowl with plastic wrap and lightly spray with oil spray.
  • Pour the ice cream mixture in the bowl, smooth the top then cover and freeze 9+ hours or overnight.

Make the Oreo crust:

  • Pulse the Oreos in food processor until crumbed.
  • Place in a deep bowl and top with melted butter, mix well.
  • Pour the Oreo mixture into a 9 inch pie dish.
  • Spread crumbs with your hands pressing them against the bottom and sides of the pie dish. You can also use a measuring cup to press the crumbs into the dish.
  • Freeze for a couple of hour or overnight.

Assemble the pie:

  • Remove both pie crust and ice cream from freezer.
  • Uncover the ice cream and carefully place the ice cream bowl upside down on the Oreo crust. Remove the plastic wrap.
  • Microwave the fudge for 10 seconds, stir and make sure it is not hot, just stir-able.
  • Spoon about 1 cup of the fudge over the ice cream dome and spread evenly.
  • Freeze for another 30 minutes.
  • Remove pie from freezer, slice and garnish with whipped cream, more macadamia nuts and fudge if desired.

Notes

  • You can use a store bought Oreo crust.
  • You can use macadamia ice cream if available.
  • Macadamia ice cream has a hint of coconut that's why we need the coconut flavor but feel free to skip if you do not like it.
  • Use store bought or homemade fudge topping.
  • Do no microwave the fudge as it says on the jar, if store bought, this will warm it up too much and when poured over the ice cream it will make a mess and the ice cream will melt.
  • It helps to dip a clean knife into hot water then wipe it dry before slicing. This will give you a beautiful smooth and clean cut. Rewarm the knife between cuts.
  • If you do not have a food processor, you can put the Oreo cookies in a sealed bag and roll them with a rolling pin until finely crushed.
 
Storage:
  • Leftover over Hula pie can wrapped and kept in your freezer for up 1 to 2 weeks. When ready to serve, let thaw for 15 minutes for easier slicing. It is not recommended to store Hula pie in the refrigerator as the ice cream will melt.
