Lemon Dill Chicken
A quick and easy lemon chicken recipe with fresh dill, a great weeknight dinner served with rice or pasta.

- 1½ pounds boneless skinless chicken thighs
- Salt and freshly ground black pepper to taste
- 2 Tablespoon olive oil
- 1 Tablespoon butter unsalted
- 3 garlic cloves minced
- ¼ cup flour
- 1½ cup chicken broth
- 3 Tablespoon lemon juice
- 2 Tablespoon dill
Season chicken on both sides with salt and pepper.
In a non-stick skillet over medium high heat add oil and brown chicken for about 4-5 minutes each side.
Remove chicken from skillet.
Remove skillet from heat and allow to cool down for just a minute then return to medium heat.
Add butter then when it melts add garlic and sauté for 30 seconds.
Add flour and cook until lightly browned.
Gradually whisk in 1 ¼ cup of chicken stock stirring occasionally until smooth and creamy.
Stir in lemon juice.
Add the chicken back and simmer on medium heat for 10 minutes.
Stir in dill and taste to adjust seasoning.
Serve immediately.
- I almost always double or triple the dill amount because I love dill. If you are like me then feel free to add more.
- You might need more lemon juice so adjust to your taste as well.
- If you want to use fresh squeezed lemon juice, usually you can get 2 tablespoons of lemon juice from one lemon.
