Lemon Dill Chicken

A quick and easy lemon chicken recipe with fresh dill, a great weeknight dinner served with rice or pasta.

Equipment

  • 1 non-stick skillet

Ingredients

  • pounds boneless skinless chicken thighs
  • Salt and freshly ground black pepper to taste
  • 2 Tablespoon olive oil
  • 1 Tablespoon butter unsalted
  • 3 garlic cloves minced
  • ¼ cup flour
  • cup chicken broth
  • 3 Tablespoon lemon juice
  • 2 Tablespoon dill

Instructions

  • Season chicken on both sides with salt and pepper.
  • In a non-stick skillet over medium high heat add oil and brown chicken for about 4-5 minutes each side.
  • Remove chicken from skillet.
  • Remove skillet from heat and allow to cool down for just a minute then return to medium heat.
  • Add butter then when it melts add garlic and sauté for 30 seconds.
  • Add flour and cook until lightly browned.
  • Gradually whisk in 1 ¼ cup of chicken stock stirring occasionally until smooth and creamy.
  • Stir in lemon juice.
  • Add the chicken back and simmer on medium heat for 10 minutes.
  • Stir in dill and taste to adjust seasoning.
  • Serve immediately.

Notes

  • I almost always double or triple the dill amount because I love dill. If you are like me then feel free to add more.
  • You might need more lemon juice so adjust to your taste as well.
  • If you want to use fresh squeezed lemon juice, usually you can get 2 tablespoons of lemon juice from one lemon.
