Ingredients

  • 1 large onion peeled and cut into chunks.
  • 4 lb corned beef with spice packet flat cut
  • 2 ½ cups water
  • 4 large carrots Peeled and cut into chunks
  • 8 red or yellow potatoes halved or quartered depending on size

Instructions

  • In the slow cooker, add onions to the bottom, then put corned beef on top.
  • Sprinkle the content of the spice pack on top of the beef.
  • Pour in water.
  • Cover and cook on low for 8-9 hours.
  • Add potatoes and carrots halfway through cooking.
  • Slice the beef and serve with the veggies.
