Fire Roasted Tomatoes

Easy and delicious homemade fire-roasted tomatoes are way better than store bought. Fresh with a delicious smoky flavor and ready to be used in any of your recipes.

Equipment

Ingredients

  • 2 lbs Roma tomatoes
  • 3 Tablespoons olive oil
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper
  • 2 cloves garlic minced
  • 2 teaspoon fresh rosemary chopped
  • 1 Tablespoon fresh basil chopped

Instructions

  • Wash and cut tomatoes lengthwise.
  • In a medium bowl combine all the ingredients except for the tomatoes and mix well.
  • Add the tomatoes and toss to combine.
  • Preheat the oven to 450°F.
  • Place the tomatoes on a rimmed baking sheet and bake in the center of your oven for 25-30 minutes until completely done.
  • Place in mason jars and cover with a thin layer of oil.

Notes

  • Any tomatoes will work for this recipe, plum tomatoes are the best choice as they make the most tasty sauces. 
  • This recipe is excellent when you have a lot of summer tomatoes in your garden, there is a ridiculous sale on tomatoes in your area or to pump up the flavor in winter tomatoes.
  • Use it to take your pasta sauces to the next level.
  • If you do not like a strong garlic presence you can simply leave the garlic cloves whole and roast them with the tomatoes, place in the jar with the tomatoes to give a faint aroma. Discard when using tomatoes.
  • To Store:
    • Refrigerate in an air-tight container for up to 2 weeks or freeze for up to 4-5 months.
