Minty matcha smoothie with ginger syrup for a delicious refreshing drink.
For the Ginger syrup
- 1/2 cup granulated sugar.
- 1/6 pound ginger root, thinly sliced (about 1/2 cup).
- 3/4 cup water.
For the smoothie
- 1 cup cashew milk.
- 2 scoops of frozen yogurt. (1/2 cup)
- 1 Tablespoon matcha powder.
- 2 Tablespoon ginger syrup.
- 4 or more fresh mint leaves.
Start by making the syrup, in a pot over medium high heat combine water, ginger and sugar and bring to a boil.
Reduce heat to low and let it simmer for about 20 minutes until a bit thicker.
Strain the syrup and let it cool down.
