Baked bbq chicken

A delicious sticky with a hint of sweetness bbq drumsticks right out of your oven. No grill is required. An easy bbq chicken drumsticks recipe for your weeknigh dinners.

Ingredients

For the marinade:

  • 4 garlic cloves. minced.
  • 1 Tablespoon lime juice. about half a lime.
  • 2 Tablespoon olive oil.
  • 2 teaspoon Salt or to taste.
  • 1/2 teaspoon freshly ground black pepper.

For the chicken:

  • 10 chicken drumsticks bone-in, skin on.
  • 2 cups Barbecue sauce homemade or store bought.

Instructions

  • In a bowl, add the garlic, olive oil, lime juice, salt and pepper and mix well to combine.
  • Clean the chicken thoroughly, pat dry then cut a slit in each one and place in the bowl.
  • Coat the chicken on all sides and marinate for 30 minutes or overnight.
  • Preheat the oven to 350F.
  • Line a baking sheet with aluminum foil then brush with some olive oil. Or line with parchment paper.
  • Arrange drumsticks on your baking sheet. Bake for an hour.
  • Remove chicken from oven and up the heat to 425F.
  • Brush the drumsticks with bbq sauce then flip and brush the other side as well. Bake for 7 minutes.
  • Repeat brushing and baking for another 3 or 4 times or until chicken is crispy, sauce is dark and thick and well layered on your chicken.

Notes

Serve with:
A simple green salad, couscous salad, or chickpea salad.
