Spicy one pot wild rice shrimp

This is a one-pot family meal spicy wild rice shrimp recipe.Rich, delicious and a perfect 30 minutes dinner for busy weeknights.

Ingredients

  • 3 Tablespoons oil.
  • 1 small yellow onion , diced.
  • 2 garlic cloves , minced.
  • ½ cup tomato sauce.
  • 2 Tablespoon tomato paste.
  • ½ Tablespoon kosher salt.
  • ¼ teaspoon turmeric.
  • ¼ teaspoon cayenne pepper.
  • 1 cinnamon stick.
  • 4 cloves .
  • 1 teaspoon cumin powder.
  • 1 teaspoon freshly ground black pepper.
  • 4 cups water.*
  • 1 ½ cup of long grain wild rice blend.*
  • 12 oz peeled and divined shrimps.

Instructions

  • n a pot over medium-high heat, add oil then sauté the onion for about 3 minutes or until fragrant.
  • Add garlic and sauce for another minute.
  • Add the turmeric, black pepper and cumin.
  • Stir the spices for another minute to bring up all the fragrance.
  • Add in the tomato sauce, paste stir until everything is combined.
  • When it starts to bubble add the rice, stir for a minute then add water.
  • Bring to a boil, then reduce heat and cover for 20 minutes.
  • Add the shrimps, cover and continue cooking for 20 more minutes.
  • Fluff with fork and serve with lemon wedges on the side.
  • Enjoy!!

Notes

* I’ve used packages of wild rice blend, store bought and discarded the spice bags within them. The amount of water depends on the type of rice you are using so please refer to the package directions and just take away ⅓- ½ cup of water from the suggested amount as we are using tomato sauce as well.
