Vegetarian Black Eyed Peas Recipe

Okay seriously THANK YOU for this recipe. I was making black eyed peas for dinner tonight and my mom didn’t answer  my call to tell me her recipe so I looked this one up. It was just like  hers. I’m so grateful!

INGREDIENTS

Dry black eyed peas Onion Garlic Oil Tomato sauce Tomato paste

Soak peas in water for 2 hours. In a deep pot over medium high heat add olive oil and saute onion.

Step 1

Add garlic and continue to cook for another 30 seconds.

Step 2

Pour in tomato sauce , tomato paste, water or stock if using and all the spice.

Step 3

Add in the soaked beans and stir everything well together. Reduce heat, cover and simmer until cooked.

Step 4

Serve with crusty bread or over rice.

Enjoy a delicious black eyed peas without the meat!
