Hamburger Rice Casserole

This is a complete favorite family meal with ground beef veggies and rice all cooked to perfection and topped with melty cheese for more deliciousness.

Ingredients

  • 2 Tablespoon olive oil
  • 1 medium onion diced
  • 1 pound ground beef
  • 1 large garlic clove minced
  • 1 red bell pepper diced
  • 2 cups frozen peas or any frozen diced veggies you like
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon ground cinnamon
  • ½ - ¾ teaspoon black pepper freshly ground
  • Salt or to taste
  • 2 Tablespoons tomato paste
  • 1 Tablespoon Worcestershire sauce
  • 1 ¼ cup long grain white rice
  • 2 cups beef broth
  • 1 ½ cups shredded cheese mozzarella or cheddar

Instructions

  • Preheat oven to 350F.
  • In a large pot or dutch oven, heat oil on medium high and saute onions until translucent.
  • Add garlic and continue to cook for 30 seconds more.
  • Add ground beef breaking it apart and cook until no longer pink. Drain excess fat if necessary.
  • Add diced bell peppers and frozen veggies and mix.
  • Add Italian seasoning, black pepper, Worcestershire sauce, salt, tomato paste, uncooled rice and mix well.
  • Pour in beef broth, bring to a boil then reduce heat and continue to cook until done.
  • Remove from heat, fluff and pour into a 13x9 baking dish.
  • Sprinkle shredded cheese on top and return to oven until cheese melts.
