Mashed Potatoes and Ground Beef

For the mashed potatoes:
- 4 pounds Russet potatoes
- ½ teaspoon garlic powder
- ⅓ cup unsalted butter melted
- 1 cup heavy cream
- Salt and pepper to taste
For the ground beef:
- 1 ½ tablespoon olive oil
- 1 onion finely chopped
- 2 garlic cloves minced
- 1.5 pound lean ground beef
- 2 Tablespoons flour
- 1 Tablespoon Worcestershire sauce
- ¼ cup tomato paste
- 1 cup beef broth
- 2 dry bay leaves
- 2 springs for fresh thyme
- Salt and pepper to taste
Make the potatoes:
Peel and dice potatoes into equal cubes, place in a deep pot and cover with cold water. Add salt and bring to a boil over medium high heat.
Cook uncovered for about 10-15 minutes or until fork tender. Drain.
In a microwave safe measuring cup add cream. Microwave until warm.
Add butter to potatoes and mash with a potato masher or a fork.
Gradually pour in warm cream and mix until you reach the desired consistency.
Season with salt, black pepper and garlic powder.
Make the ground beef mixture:
While the potatoes are boiling, make the ground beef mixture.
Heat oil in a large skillet over medium high heat and saute onion until translucent.
Add garlic and continue to cook for 30 seconds.
Add ground beef and cook breaking it apart until browned and no longer pink.
Mix in flour then add thyme, bay leaves, Worcestershire sauce, tomato paste and broth.
Mix everything well and season with salt and pepper.
Bring the mixture to simmer and continue cooking for 10 more minutes stirring occasionally until it thickens to a gravy consistency.
Serve mashed potatoes topped with ground beef.
