Mashed Potatoes and Ground Beef

Ingredients

For the mashed potatoes:

  • 4 pounds Russet potatoes
  • ½ teaspoon garlic powder
  • cup unsalted butter melted
  • 1 cup heavy cream
  • Salt and pepper to taste

For the ground beef:

  • 1 ½ tablespoon olive oil
  • 1 onion finely chopped
  • 2 garlic cloves minced
  • 1.5 pound lean ground beef
  • 2 Tablespoons flour
  • 1 Tablespoon Worcestershire sauce
  • ¼ cup tomato paste
  • 1 cup beef broth
  • 2 dry bay leaves
  • 2 springs for fresh thyme
  • Salt and pepper to taste

Instructions

Make the potatoes:

  • Peel and dice potatoes into equal cubes, place in a deep pot and cover with cold water. Add salt and bring to a boil over medium high heat.
  • Cook uncovered for about 10-15 minutes or until fork tender. Drain.
  • In a microwave safe measuring cup add cream. Microwave until warm.
  • Add butter to potatoes and mash with a potato masher or a fork.
  • Gradually pour in warm cream and mix until you reach the desired consistency.
  • Season with salt, black pepper and garlic powder.

Make the ground beef mixture:

  • While the potatoes are boiling, make the ground beef mixture.
  • Heat oil in a large skillet over medium high heat and saute onion until translucent.
  • Add garlic and continue to cook for 30 seconds.
  • Add ground beef and cook breaking it apart until browned and no longer pink.
  • Mix in flour then add thyme, bay leaves, Worcestershire sauce, tomato paste and broth.
  • Mix everything well and season with salt and pepper.
  • Bring the mixture to simmer and continue cooking for 10 more minutes stirring occasionally until it thickens to a gravy consistency.
  • Serve mashed potatoes topped with ground beef.
