Lemon Garlic Chicken

  • 1 1/2 Tablespoons lemon zest.
  • 1/3 cup olive oil.
  • 1 Tablespoon garlic crushed.
  • 1 1/4 teaspoon salt.
  • 1 teaspoon ground black pepper.
  • 1/3 cup lemon juice.
  • 1/2 teaspoon ground cardamom.
  • 2 pounds boneless skinless chicken thighs. ( Note1)

For the topping:

  • 1 Tablespoon olive oil.
  • 1 Tablespoon butter.
  • 10 oz grape tomatoes.
  • 1/2 cup pitted black olives halved.
  • 1/4 cup chopped parsley.


  • In a ziplock bag, combine all the ingredients well. Seal and refrigerate overnight. (Note2)
  • Grill or bake chicken at 350 F for 25-30 minutes.

Meanwhile make the topping:

  • In a skillet over medium heat, add oil and roast tomato until it starts to be squishy.
  • Add olive halves and cook for another minute.
  • Add parsley and stir for another minute or so. Turn heat off.
  • Serve chicken topped with the olive mixture.


1) You can use chicken breast instead.
2) If you are in a hurry reduce to 30 minutes. I just love marinating it longer.
