Lemon Garlic Chicken

- 1 ½ Tablespoons lemon zest.
- ⅓ cup olive oil.
- 1 Tablespoon garlic crushed.
- 1 ¼ teaspoon salt.
- 1 teaspoon ground black pepper.
- ⅓ cup lemon juice.
- ½ teaspoon ground cardamom.
- 2 pounds boneless skinless chicken thighs. ( Note1)
For the topping:
- 1 Tablespoon olive oil.
- 1 Tablespoon butter.
- 10 oz grape tomatoes.
- ½ cup pitted black olives halved.
- ¼ cup chopped parsley.
In a ziplock bag, combine all the ingredients well. Seal and refrigerate overnight. (Note2)
Grill or bake chicken at 350 F for 25-30 minutes.
Meanwhile make the topping:
In a skillet over medium heat, add oil and roast tomato until it starts to be squishy.
Add olive halves and cook for another minute.
Add parsley and stir for another minute or so. Turn heat off.
Serve chicken topped with the olive mixture.
1) You can use chicken breast instead.
2) If you are in a hurry reduce to 30 minutes. I just love marinating it longer.
