Buckeye Balls

An old fashioned confection, these peanut butter balls are always a favorite and you will be surprised at how simple it is to make. Buckeye balls are really a good snack, dessert or appetizer.

Ingredients

  • 1 cup creamy peanut butter 250g
  • 2 cups sifted powdered sugar 260g
  • 6 Tablespoons unsalted butter room temperature
  • 1 teaspoon vanilla extract

For Chocolate dipping:

  • 6 oz semi-sweet chocolate chips
  • 1 Tablespoon vegetable oil divided

Instructions

  • Line a baking sheet or tray with parchment paper and set aside.
  • In a large bowl using a mixer cream together butter, vanilla extract and peanut butter until smooth and creamy.
  • Gradually mix in the powdered sugar until all is well mixed in.
  • Form the peanut butter mixture into 24 balls, each about 1 tablespoon.
  • Place balls on the baking sheet or tray and refrigerate for 30 minutes.

Melt the chocolate:

  • Place chocolate on a microwave safe glass bowl with 1 ½ teaspoon of the oil.
  • Heat at medium power (50%) for 20-second intervals, stirring in between.
  • Stop when small lumps are left and continue to stir until completely melted.
  • Insert a wooden toothpick into one ball and dip into the melted chocolate.
  • Gently wipe the bottom of the ball against the side of the bowl to remove excess chocolate and place back on the baking sheet.
  • Remove the toothpick and smooth the top with the toothpick to remove the hole left from it.
  • Continue with the remaining balls until done and refrigerate for at least 1 hour to firm up.

Notes

  • Use good quality chocolate.
  • For best results use creamy, unsweetened peanut butter. 
  • You can also use vegetable oil, canola oil, shortening or coconut oil for thinning chocolate. Bear in mind that coconut oil will add a hint of coconut taste to the chocolate.
  • If you are new to melting chocolate or using a different microwave that you are still not familiar with, I suggest melting ⅔rds of the chocolate and then adding the remaining later to the bowl to avoid scorching the chocolate.
  • If after you melted your chocolate you still want to thin it more stir in the remaining oil, no need to microwave again.
Variations:
  • Although peanut butter is the normal you can use a different type of nut butter you like.
  • Try with a different type of chocolate.
Storage:
  • Refrigerate leftover buckeye balls covered for up to 2 weeks.
