Zucchini Pulp appetizer

Ingredients

  • 1 large onion , chopped.
  • 3 Tablespoons olive oil.
  • 1 lb zucchini pulp , got it out of 3lb zucchini.
  • 1 teaspoon garlic , minced.
  • 1/2 cup red bell pepper , diced.
  • 1/2 cup tomato , diced.
  • Salt and pepper to tate.
  • 4 Tablespoons lemon juice.

For garnishing:

  • Parsley , chopped.

Instructions

  • In a pan over medium heat, sauté onion in olive oil until tender.
  • Add zucchini pulp , keep stirring until it is cooked and tender , will take probably anywhere between 8-10 minutes.
  • Add the garlic, red pepper then tomato and stir for 2 minutes.
  • Season with salt and pepper and add the lemon juice.
  • Stir everything well together for a minute then turn off the heat.
  • Garnish with chopped parsley, more lemon wedges.
  • Serve warm or cold.
  • Enjoy!!
