Almond Butter Cookies

- 1 cup creamy almond butter no sugar added
- ¾ cup granulated sugar
- 1 large egg
Preheat oven to 350F and line a large baking sheet with parchment paper. Set aside.
Place egg in a medium bowl and whisk.
Add almond butter and sugar then mix well until smooth and creamy.
Mix in chocolate chips if using.
Scoop about 1.5 tablespoon of the mixture using a cookie scoop. Roll between the palms of your hands and place on the cookie sheet about 2 inches apart.
Flatten each into smooth rounds.
Bake in the center of your oven for 10-12 minutes or until cookies are golden brown.
Remove from oven and let them cool for 3-4 minutes in the cookie sheet then carefully transfer to the wire rack and let them cool completely.
