Almond Butter Cookies

Melt in your mouth, simple and naturally gluten free almond butter cookies. These wholesome flourless cookies are so easy to make with just 3 ingredients.

Ingredients

  • 1 cup creamy almond butter no sugar added
  • ¾ cup granulated sugar
  • 1 large egg

Optional:

  • ½ cup chocolate chips

Instructions

  • Preheat oven to 350F and line a large baking sheet with parchment paper. Set aside.
  • Place egg in a medium bowl and whisk.
  • Add almond butter and sugar then mix well until smooth and creamy.
  • Mix in chocolate chips if using.
  • Scoop about 1.5 tablespoon of the mixture using a cookie scoop. Roll between the palms of your hands and place on the cookie sheet about 2 inches apart.
  • Flatten each into smooth rounds.
  • Bake in the center of your oven for 10-12 minutes or until cookies are golden brown.
  • Remove from oven and let them cool for 3-4 minutes in the cookie sheet then carefully transfer to the wire rack and let them cool completely.
