Bruschetta with Balsamic Glaze
Bruschetta is an easy Italian appetizer made with toasted garlic crusty bread slices topped with diced tomatoes and fresh basil. Very simple yet flavorful fresh side or appetizer.

For the tomato mixture:
- 8 roma tomatoes 3 cups diced
- ½ cup fresh basil leaves chopped
- 4 garlic cloves minced
- 3 Tablespoons olive oil
- 4 teaspoons balsamic vinegar
- Salt and pepper to taste
Bread:
- 1 large baguette sliced into ¼ inch slices diagonally
- 3 Tablespoons garlic oil or mix one minced garlic clove with 3 tablespoons of olive oil
- ½ cup parmesan cheese
Core and dice tomatoes, place on a colander to drain excess liquid.
Place chopped basil, diced tomatoes, garlic, balsamic vinegar, olive oil and season with salt and pepper. Lightly toss to coat.
Preheat oven to 400F and line a baking sheet with parchment paper.
Brush toast on both sides with garlic oil and sprinkle tops with parmesan cheese.
Place in the center of your oven for 5 minutes.
Serve toast with tomato mixture and balsamic glaze.
