Cowboy Cornbread Casserole Recipe

For the ground beef mixture
- 1 Tablespoon olive oil
- 1 medium yellow onion diced
- 2 pounds ground beef
- 1 packet taco seasoning
- 1 can RoTel with water (10 ounces) or a can of diced tomatoes with diced chilies
- 1 can corn 14.5 ounces not drained
- 1 can pinto beans 14.5 ounces rinsed and drained
For the cornbread mixture:
- 2 boxes Jiffy Cornbread
- 2 eggs
- ¾ cup milk
Optional:
- 1-2 cups Mexican or Cheddar shredded cheese
Preheat oven to 375°F and lightly grease a 13x9 casserole dish with cooking oil spray.
In a large skillet over medium-high heat add oil and sauté onion until translucent.
Add ground beef breaking it apart until cooked and browned, drain excess fat if necessary.
Add taco seasoning, RoTel, corn and beans and mix everything well for a couple of minutes then turn heat off.
In a medium mixing bowl combine the cornbread mixture with eggs and milk according to package instructions.
Spread ground beef mixture at the bottom of your casserole dish topped with shredded cheese if using.
Spread cornbread mixture on top and smooth top evenly.
Bake uncovered in the center of your preheated oven for 40-45 minutes or until cornbread is fully baked. A toothpick inserted in the middle comes out clean.
Cover loosely and let it rest for 10 minutes before cutting and serving.
