Ingredients

  • tbsp  olive oil
  • 1 small onion diced.
  • 2 large garlic cloves minced
  • 1 pound ground beef , 85/15 or 80/20
  • 2 tablespoon white vinegar
  • 1 can (14oz) tomato puree
  • 1 teaspoon salt or to taste

Optional:

  • 3-4 tablespoon parsley chopped.

Spice Mix:

  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cloves
  • ¼ teaspoon sumac
  • ¼ teaspoon all spice
  • teaspoon turmeric
  • teaspoon ground cardamoms
  • teaspoon cinnamon

For serving:

  • brioche buns toasted (or warm pita bread)
  • tomato slices
  • Onion slices
  • Pickles
  • Toum (garlic shawarma sauce) or Tahini sauce

Instructions

  • In a small bowl, mix all the spices for the shawarma and set aside.
  • Heat olive oil in a large skillet over medium heat. Add the diced onion and sauté for 2–3 minutes until soft. Add the minced garlic and cook for another 30 seconds until fragrant.
  • Add the ground beef, breaking it apart with a spoon. Cook for 5–6 minutes until browned.
  • Add the spice mix and salt, stirring well to distribute them into the meat. Cook for 1–2 minutes more.
  • Stir in the white vinegar and tomato puree. Reduce heat to medium-low and simmer for 5–6 minutes, stirring occasionally, until the sauce thickens to a sloppy joe consistency.
  • Stir in the fresh chopped parsley if using and remove from heat.
  • Spread a generous layer of Toum (garlic sauce) onto toasted brioche buns. Spoon the warm meat mixture on top, add tomato, onion slices, and pickles, then serve immediately.
