In a non-stick pan over medium heat, add oil then sauté diced onions for 2-3 minutes or until translucent.
Add garlic and continue to sauté for another 30 seconds.
Add ground beef and brown all over breaking it apart as it cooks.
Mix in tomato paste, and all the spices. Continue to cook for another minute then turn heat off.
Taste the ground beef mixture and adjust seasoning as needed.
Preheat the oven to 350°F.
Wash and core the bell peppers removing the seeds and white ribs.
Fill the bell peppers with the meat mixture, and place in an oven safe dish.
Cover with aluminum foil and bake for 20 minutes.
Remove the dish from the oven, uncover and top each one with shredded cheese.
Return to the oven until the cheese melts and slightly browns.
