    Keto stuffed peppers are perfect for those on a Keto diet or low carb eating plan but want a satisfying meal the whole family will love. Flavorful ground beef with all the best spices and cheese is baked in a sweet bell pepper until tender and cheesy deliciousness.

    Stuffed sweet bell peppers are a terrific way to get your family on board with eating veggies as well as maintaining your low carb eating plan and having a delicious dinner. If you have kids, try cutting up the bell pepper into small pieces so it mixes in with the meat after it's fully cooked.

    1. In a non-stick pan over medium heat, add oil and then sauté diced onions for 2-3 minutes. Add garlic and continue to sauté for another 30 seconds.
    2. Add ground beef and brown all over breaking it apart as it cooks.
    3. Mix in tomato paste and all the spices.
    4. Continue to cook for another minute then turn the heat off. Taste the meat mixture to adjust seasoning.

    1. Preheat the oven to 350°F. Wash and core the bell peppers removing seeds and white ribs.
    2. Fill the bell pepper with the meat mixture, and place in an oven safe dish. Cover with aluminum foil and bake for 20 minutes. Remove the dish from the oven, uncover and top each one with shredded cheese. Return to the oven until the cheese melts and slightly browns.

    💡 Expert Tips

    • Use any type of bell peppers you like.
    • Top the peppers with any shredded cheese you like. Cheddar, Monterey, mozzarella cheese or even sliced cheese.
    • If you want to use less ground beef or your bell peppers are huge you might add a cup of cauliflower rice or cooked diced mushrooms to the meat mixture.
    • Use any ground meat you like. Ground turkey, chicken or lamb are great in this recipe too.
    • Cut your bell peppers lengthwise, if they are bigger than average size.

    🧺 Storage

    Store leftovers in airtight containers and refrigerate for 3-4 days. To reheat, loosely cover then place in a 350F oven until thoroughly heated.

    Which bell pepper is best on a low carb diet?

    All sweet bell peppers are low in carbs but know that green bell peppers are the lowest in carbs. Regardless all bell peppers are anti-inflammatory and rich in vitamin C and a good veggie choice.

    How can I tell when stuffed peppers are done?

    An instant read thermometer should read at least 160°F. Also look at the bell peppers, they should be soft and tender and the cheese melted.

    Ingredients

    • 2 Tablespoons oil
    • 1 medium onion diced
    • 2 cloves garlic minced
    • 1 pound ground beef
    • 1 Tablespoon tomato paste
    • ¾ - 1 teaspoon ground cinnamon
    • ¾ - 1 tsp dry oregano
    • ½ teaspoon black pepper
    • ½ teaspoon salt or to your liking
    • ½ teaspoon red pepper flakes optional for heat
    • 6 bell peppers cored and top removed
    • 1 cup colby cheese shredded

    Instructions
