- In a non-stick pan over medium heat, add oil and then sauté diced onions for 2-3 minutes. Add garlic and continue to sauté for another 30 seconds.
- Add ground beef and brown all over breaking it apart as it cooks.
- Mix in tomato paste and all the spices.
- Continue to cook for another minute then turn the heat off. Taste the meat mixture to adjust seasoning.
- Preheat the oven to 350°F. Wash and core the bell peppers removing seeds and white ribs.
- Fill the bell pepper with the meat mixture, and place in an oven safe dish. Cover with aluminum foil and bake for 20 minutes. Remove the dish from the oven, uncover and top each one with shredded cheese. Return to the oven until the cheese melts and slightly browns.
