- Place broccoli in a pot of boiling water and cook for 3 minutes until tender but still crisp. Using a slotted spoon remove broccoli and let it drain completely.
- In a large pot or dutch oven sauté onion and celery then add milk, chicken broth and stir in bouillon. Whisk in cream cheese then remove from heat and add mayonnaise, sour cream and continue to whisk until they are all creamy and nice.
- Mix in curry powder if using, 1 cup of cheddar cheese, chicken and cooked broccoli.
- Pour mixture into your prepared casserole and bake in the middle of your oven for 10-15 minutes or until bubbly. Top with remaining cheese and return to oven for another 5 minutes or until cheese melts.

Keto Chicken Divan
Ingredients
- 12 oz fresh broccoli florets
- 2 Tablespoons butter
- 1 small onion diced
- 1 celery stick diced about ½ cup
- ½ cup milk
- ½ cup chicken broth
- 1 teaspoon chicken bouillon
- 1 8oz block cream cheese, cut into 6-8 pieces
- ¼ cup sour cream
- ½ cup mayonnaise
- 2 cups shredded cheddar cheese
- 1 pound cooked chicken cubed
Optional:
- 2 teaspoons curry powder
- Or
- ½ teaspoon black pepper
Instructions
- Preheat oven to 350F.
- Lightly grease a 9x13 casserole and set aside.
- Place broccoli in a pot of boiling water and cook for 3 minutes until tender but still crisp.
- Using a slotted spoon remove broccoli and let it drain completely.
- In a large pot or dutch oven melt butter on medium heat and sauté onion and celery for 3 minutes.
- Add milk, chicken broth and stir in bouillon. Cook for 3 minutes reduce heat to medium low.
- Add in cream cheese pieces whisking slowly until it completely dissolves and you get a smooth creamy sauce.
- Remove from heat and add mayonnaise, sour cream and continue to whisk until they are all creamy and nice.
- Mix in curry powder if using, 1 cup of cheddar cheese, chicken and cooked broccoli.
- Pour mixture into your prepared casserole and bake in the middle of your oven for 10-15 minutes or until bubbly.
- Top with remaining cheese and return to oven for another 5 minutes or until cheese melts.
Notes
- You can use frozen broccoli in this recipe, you’ll need to thaw first and let them drain excess water then pat dry.
- Variations:
- Skip the cheddar cheese at the top and mix two tablespoons of butter with your favorite keto crumbs, or crushed keto crackers, for a crunchy top.
