    Nothing says summertime like grilled chicken and this oregano chicken recipe is delightfully good. The marinade makes the chicken so tender it melts in your mouth and incredibly flavorful.

    Oregano chicken is a Greek chicken recipe with all the flavors you love - oregano, lemon, garlic, olive oil and a touch of seasonings. Throw it on your grill or bake it in the oven, either way the result is an easy weeknight meal or use the chicken on a salad for an easy lunch.

    • Chicken breasts: Use any cut of chicken you like, I like to use boneless chicken breasts.
    • Lemon juice
    • Oregano
    • Olive oil: use a high smoking point oil.
    • Garlic
    • Salt and pepper

    1. In a large bowl, mix all the marinade ingredients well.
    2. Add chicken breasts and rub all over to cover. Refrigerate chicken for 30-60 minutes
    3. Preheat grill or griddle pan to high heat. Grill chicken for 6-7 minutes on each side.
    4. Place chicken on a plate and cover with tented foil, let it rest for 5 minutes before serving.

    💡 Expert Tips

    • Use high smoking point olive oil or any high smoking point oil.
    • You can use any cut or chicken you like.
    • If you use a different cut of chicken, such as chicken thighs or chicken drumsticks, it may take longer to cook. Be sure to use a meat thermometer to check for doneness.
    • To help with sticking you might want to rub the grill grates with oiled paper towels.

    Oregano has a very distinct and earthy flavor. It is popular with Italian cuisine but also used in Mediterranean cooking as well. Because it is a strong herb flavor, a little goes a long ways.

    Can I use fresh oregano in a marinade?

    Yes, fresh oregano can be used the marinade recipe. You should use about 3 teaspoons of fresh oregano to 1 teaspoon of dried. However, dried is preferred in this oregano chicken recipe as it adds a nice flavor and color to the chicken.

    • Place marinated chicken in a freezer bag, remove excess air and freeze for up to 3 months.
    • Also marinated oregano chicken can be refrigerated for up to 2 days.

    Ingredients

    • 2 pounds chicken breasts boneless and skinless, about 4 chicken breasts

    For the Marinade:

    • 3 Tablespoons lemon juice
    • 2 teaspoon oregano
    • 1 teaspoon salt or to taste
    • 1/4 cup olive oil
    • 2 cloves garlic minced
    • 1/2 teaspoon black pepper freshly ground

    Instructions

    • In a large bowl, mix all the marinade ingredients well.
    • Add chicken breasts and rub all over to cover.

      • Can also be cooked on a hot skillet, heat a tablespoon of oil in a large skillet on medium-high heat and cook 6-7 minutes per side or until internal temperature reaches 165F.
    • Storage:
