📋 Ingredient Notes

  • Olive oil - Don't have olive oil? You can use butter or your favorite oil instead. 
  • Onion - Yellow or white onions work best in cooked meals like this one. 
  • Garlic - I used garlic cloves, however you can use jarred minced garlic or garlic powder. 
  • Broth - I used chicken broth, vegetable broth would also work. 
  • Cooked chicken - Any type of cooked chicken can be used in this casserole. 
  • Cream cheese - I've found that the block cream cheese works best in a casserole recipe. 
  • Frozen chopped spinach - Make sure that you pick up spinach that is not seasoned. 
  • Artichoke hearts - Grab a can of these from the canned goods aisle at your local store. 
  • Sour cream - This creamy sauce adds a nice tangy flavor to this casserole. 
  • Grated parmesan - I recommend using freshly grated parmesan cheese instead of using the canned stuff. 
  • Shredded mozzarella cheese - For the best melting cheese, use freshly shredded cheese instead of the bagged kind. 
  • Salt and black pepper - Adjust these seasonings to suit your taste buds in this recipe.

  1. Heat oil on a skillet over medium-high heat add onion and saute for 2 minutes. Add minced garlic and saute for another 30 seconds. Stir in broth, then mix in cream cheese.
  2. In a big bowl, add chicken, spinach, artichoke, sour cream, parmesan cheese, and half a cup of mozzarella cheese.
  3. Pour the cream cheese over the chicken and mix everything well. Taste and add salt and black pepper if needed.
  4. Spread the mixture in the casserole dish, and top with the remaining 1 ½ mozzarella cheese. Bake in the center of your 350-degree preheated oven for 30 minutes or until bubbly.

💡Amira's Tips

  • You can use any type of cooked chicken. You can use rotisserie chicken or cook up your favorite baked or poached chicken for this casserole. 
  • This casserole tends to get very sticky so make sure that you spray your casserole dish well with nonstick cooking spray or grease it with butter or shortening to make cleanup easier. 
  • You must get as moisture out of the frozen spinach as possible. Otherwise your casserole with be runny. 

🧺 Storage

Storage - Store leftovers in an airtight container in the fridge for 2-3 days. It tastes great as leftovers. 

Freezing - You can also freeze the casserole for up to three months. Make sure that you cover it tightly with plastic wrap and foil to keep it fresh. Thaw it in the fridge overnight before reheating. 

💬 FAQs

What is the best way to reheat chicken casserole? 

You can reheat individual servings in the microwave at 50% for 2-3 minutes. Or reheat large portions in the oven at 350 degrees for 15 - 20 minutes.

​Should I bake the casserole covered or uncovered? 

For this recipe, you want to bake the casserole uncovered. This will allow the top to brown and the cheese to melt instead of steaming the casserole.

⌛ Make Ahead

​One great thing about this recipe is that you can prep it ahead. Assemble the casserole but instead of baking it right away cover it with plastic wrap and store it in the fridge for up to 24 hours. When ready to serve bake according to the directions listed in the recipe.

  • Use Greek yogurt instead of sour cream in the creamy sauce to lower the calories in this artichoke chicken recipe. 
  • Out of frozen spinach? Use fresh baby spinach instead. There's no need to drain the fresh spinach like you would use the frozen spinach. 
  • Want to add a crunchy topping to this casserole? Mix 2 cups of bread crumbs with two tablespoons of melted butter. Then sprinkle it on top.

Ingredients

  • 1 tablespoon olive oil
  • ½ medium onion diced

  • 1 package 8 ounces cream cheese, softened
  • 8 ounces frozen chopped spinach thawed and squeezes dry

  • Brown top under broiler 3-5 minutes if desired.
