- Grated parmesan - I recommend using freshly grated parmesan cheese instead of using the canned stuff.
- Shredded mozzarella cheese - For the best melting cheese, use freshly shredded cheese instead of the bagged kind.

- Heat oil on a skillet over medium-high heat add onion and saute for 2 minutes. Add minced garlic and saute for another 30 seconds. Stir in broth, then mix in cream cheese.
- In a big bowl, add chicken, spinach, artichoke, sour cream, parmesan cheese, and half a cup of mozzarella cheese.
- Pour the cream cheese over the chicken and mix everything well. Taste and add salt and black pepper if needed.
- Spread the mixture in the casserole dish, and top with the remaining 1 ½ mozzarella cheese. Bake in the center of your 350-degree preheated oven for 30 minutes or until bubbly.

- You can use any type of cooked chicken. You can use rotisserie chicken or cook up your favorite baked or poached chicken for this casserole.
- This casserole tends to get very sticky so make sure that you spray your casserole dish well with nonstick cooking spray or grease it with butter or shortening to make cleanup easier.
- You must get as moisture out of the frozen spinach as possible. Otherwise your casserole with be runny.
🧺 Storage
Storage - Store leftovers in an airtight container in the fridge for 2-3 days. It tastes great as leftovers.
Freezing - You can also freeze the casserole for up to three months. Make sure that you cover it tightly with plastic wrap and foil to keep it fresh. Thaw it in the fridge overnight before reheating.

You can reheat individual servings in the microwave at 50% for 2-3 minutes. Or reheat large portions in the oven at 350 degrees for 15 - 20 minutes.

Chicken Spinach Artichoke Casserole
Ingredients
- 1 tablespoon olive oil
- ½ medium onion diced
- 2 garlic cloves minced
- ¼ cup chicken broth
- 3 cups cooked chicken chopped or shredded
- 1 package 8 ounces cream cheese, softened
- 8 ounces frozen chopped spinach thawed and squeezes dry
- 1 can 14ounce artichoke hearts, drained
- 1 cup sour cream
- ½ cup parmesan grated
- 2 cups mozzarella cheese shredded
- Salt and black pepper to taste if needed
Instructions
- Preheat oven to 350F and spray a 13x9 baking dish with cooking oil.
