- 1 tablespoon olive oil
- ½ medium onion diced
- 2 garlic cloves minced
- ¼ cup chicken broth
- 3 cups cooked chicken chopped or shredded
- 1 package 8 ounces cream cheese, softened
- 8 ounces frozen chopped spinach thawed and squeezes dry
- 1 can 14ounce artichoke hearts, drained
- 1 cup sour cream
- ½ cup parmesan grated
- 2 cups mozzarella cheese shredded
- Salt and black pepper to taste if needed
Preheat oven to 350F and spray a 13x9 baking dish with cooking oil.
Heat oil on a skillet over medium high heat add onion and saute for 2 minutes.
Add minced garlic and saute for another 30 seconds.
Stir in broth then add mix in cream cheese.
In a big bowl add chicken, spinach, artichoke, sour cream, parmesan cheese and half a cup of the mozzarella cheese.
Pour content of the skillet over and mix everything well. Taste and add salt and black pepper if needed.
Spread the mixture in the casserole dish, top with the remaining 1 ½ mozzarella cheese.
Bake in the center of your oven for 30 minutes or until bubbly,
Brown top under broiler 3-5 minutes if desired.
