Chicken Spinach Artichoke Casserole

Ingredients

  • 1 tablespoon olive oil
  • ½ medium onion diced
  • 2 garlic cloves minced
  • ¼ cup chicken broth
  • 3 cups cooked chicken chopped or shredded
  • 1 package 8 ounces cream cheese, softened
  • 8 ounces frozen chopped spinach thawed and squeezes dry
  • 1 can 14ounce artichoke hearts, drained
  • 1 cup sour cream
  • ½ cup parmesan grated
  • 2 cups mozzarella cheese shredded
  • Salt and black pepper to taste if needed

Instructions

  • Preheat oven to 350F and spray a 13x9 baking dish with cooking oil.
  • Heat oil on a skillet over medium high heat add onion and saute for 2 minutes.
  • Add minced garlic and saute for another 30 seconds.
  • Stir in broth then add mix in cream cheese.
  • In a big bowl add chicken, spinach, artichoke, sour cream, parmesan cheese and half a cup of the mozzarella cheese.
  • Pour content of the skillet over and mix everything well. Taste and add salt and black pepper if needed.
  • Spread the mixture in the casserole dish, top with the remaining 1 ½ mozzarella cheese.
  • Bake in the center of your oven for 30 minutes or until bubbly,
  • Brown top under broiler 3-5 minutes if desired.
