Meatloaf Casserole
Comforting, cheesy and very satisfying Meatloaf Casserole. A classic American dish of tender and juicy meat mixture topped with fluffy buttery mashed potatoes and all crowned with melted cheese. What's there not to like?!

- 1 ½ pounds lean ground meat
- ½ medium onion 100g finely chopped
- 1 garlic cloves minced
- ½ cup panko breadcrumbs 35 g
- ⅓ cup milk 70g
- 1 large eggs
- 1 teaspoons salt or to your liking
- ½ teaspoon black pepper
- ⅓ cup parsley leaves chopped 3g
- 4 bread slices
Topping:
- ½ cup ketchup or bbq sauce
- 24 oz mashed potatoes about 2 ½ cups
- 1 cup shredded cheese I used sharp cheddar
Preheat oven to 375F and spray a 9x9 casserole dish, arrange bread slices in the bottom then set aside.
In a large bowl combine all meatloaf ingredients and gently press in the prepared pan.
Bake in the center of your oven for 30 minutes, drain excess fat if necessary.
Spread ketchup on top then return to oven for 15 minutes.
Pipe mashed potatoes mixture over the meatloaf and top with shredded cheese.
Return to oven for another 15 minutes or until cheese melts.
