Meatloaf Casserole

This Meatloaf Casserole is a delicious and hearty dish that is perfect for weekday dinners or potluck gatherings. Made with ground beef and topped with mashed potatoes, then baked to perfection, this casserole is sure to be a family favorite.

This simple dish combines two classic American comfort foods into one delicious meal. The ground beef provides a good source of protein, while the mashed potatoes add a nice creaminess to the dish. The whole family will love it.

You'll need

  • Lean ground meat - Ground beef is the base of this dish, but you can also use ground turkey or chicken for a healthier option.
  • Yellow onion - Adds flavor to the meat mixture. A sweet onion would also work.
  • Fresh garlic cloves - Fresh garlic will give your meatloaf the best flavor, you can also use the jarred garlic if needed.
  • Panko breadcrumbs - I've found that panko adds the perfect texture to this meatloaf recipe, but you can also use regular breadcrumbs if that's what you have on hand.
  • Eggs - Large eggs work best to help bind the meatloaf together.
  • Seasonings - To make this hearty casserole, you will need salt, black pepper and fresh parsley
  • Ketchup or BBQ sauce - For both added moisture and flavor. Feel free to use your favorite brand or even make your own!
  • Mashed potatoes - you can use this Instant Pot Garlic Mashed Potatoes recipe, or your favorite homemade recipe. You can even use store-bought if you want to save a little time.
  • Shredded cheese - I like the flavor of sharp cheddar cheese, however you can use any type of cheese that you have on hand.

Comforting, cheesy and very satisfying Meatloaf Casserole. A classic American dish of tender and juicy meat mixture topped with fluffy buttery mashed potatoes and all crowned with melted cheese. What's there not to like?!

Ingredients

  • 1 ½ pounds lean ground meat
  • ½ medium onion 100g finely chopped
  • 1 garlic cloves minced
  • ½ cup panko breadcrumbs 35 g
  • ⅓ cup milk 70g
  • 1 large eggs
  • 1 teaspoons salt or to your liking
  • ½ teaspoon black pepper
  • ⅓ cup parsley leaves chopped 3g
  • 4 bread slices

Topping:

  • ½ cup ketchup or bbq sauce
  • 24 oz mashed potatoes about 2 ½ cups
  • 1 cup shredded cheese I used sharp cheddar

Instructions

  • Preheat oven to 375F and spray a 9x9 casserole dish, arrange bread slices in the bottom then set aside.

  • In a large bowl combine all meatloaf ingredients and gently press in the prepared pan.

  • Bake in the center of your oven for 30 minutes, drain excess fat if necessary.
  • Spread ketchup on top then return to oven for 15 minutes.

  • Return to oven for another 15 minutes or until cheese melts.

Why is my meatloaf falling apart?

The secret to keeping your meatloaf together is to ensure that you measure your binding ingredients correctly. The breadcrumbs, eggs, and bread slices work as binders. Don't skimp on them.

How do I stop my meatloaf from being dry?

To keep your meatloaf moist, make sure that you add enough ketchup; this will add both moisture and flavor.

Adaptable recipe – make it your own!

  • Adjust the spices to suit your taste. Add a pinch of paprika, extra garlic powder, or even cayenne for a bit of heat.
  • Add a splash or two of Worcestershire sauce for an even richer flavor.

My notes

  • When it comes to making meatloaf, the most important tip to remember is not to overmix or overwork the meat. This can cause the meat to become tough and dry.
  • I don't recommend using a super lean cut of beef. I like to use ground chuck as the fat can help keep the meat loaf moist.

Storage and reheating

Refrigerate - Store the cooked meatloaf in an airtight container and refrigerate for up to 3-4 days.

Freeze - Wrap individual slices of cooked meatloaf in plastic wrap, then place in a freezer-safe bag or container. Freeze for up to 4 months.

Reheat - Thaw frozen meatloaf in the refrigerator overnight before reheating. Reheat slices in the microwave for about 1-2 minutes or until heated through. Alternatively, you can reheat whole loaf by placing it on a baking sheet and heating it in the oven at 350°F for about 20 minutes.

Make Ahead

Meatloaf is a fantastic make-ahead dish that saves time on busy days. To prepare in advance, you can assemble the meatloaf mixture and shape it into a loaf, then cover it tightly with plastic wrap or foil and store it in the refrigerator for up to 24 hours before baking.

Perfect pairings: what to serve with

Since this casserole contains both a starch and a protein source, I like to pair it with a simple vegetable side dish, such as these Mediterranean Green Beans or these Mediterranean Roasted Vegetables. And, you can have a comfort food meal without these Buttery Dinner Rolls.
