Poppy Seed Chicken Casserole

- 3 cups cooked chicken shredded , about 1 ½ pounds
- 1 Tablespoon poppy seeds
- 1 can ((10.75 oz)) condensed cream of chicken soup with herbs or use cream of chicken soup substitute
- 1 cup sour cream or Greek yogurt
- 2 cups buttery crackers crushed about 32-36 cracker
- 2 Tablespoons butter melted
- chopped parsley or green onions optional to garnish
Preheat oven to 350°F and spray a 9x13 casserole with cooking spray.
In a deep bowl combine chicken, soup, sour cream and poppy seeds.
Spread the mixture at the bottom of the casserole.
In a medium bowl add crushed crackers and melted butter.
Toss to combine.
Sprinkle the crackers over the chicken evenly.
Bake in the oven for 20 minutes or until top is golden brown.
Serve garnished with chopped green onions or parsley if desired.
