Whipped Ricotta
An easy appetizer recipe that takes only 5 minutes to put together with tons of variations. Creamy silky and rich ricotta with fresh herbs and olive oil shines right next to pita chips, crostini or crackers

- 1 cup Ricotta cheese whole milk
- 1 Tablespoon olive oil divided
- ½ Tablespoon lime juice freshly squeezed
- 1 Tablespoons fresh cilantro chopped
- 1 Tablespoon fresh parsley chopped
- ½ teaspoon lime zest
- Salt to taste
In your food processor add ricotta, half the oil, lime and salt then process until light and creamy.
Place in a serving bowl.
In a small bowl, place fresh parsley, cilantro, lime zest and the remaining half tablespoon of olive oil.
Top the ricotta with the herb mixture and serve with an extra drizzle of olive oil.
- Variations:
You can choose any combination of fresh herbs like fresh mint, dill, rosemary, thyme..etc.
- You can also add honey to the herb mixture or top the dish with a drizzle of honey.
Make it sweet dip and use honey and some orange juice for a bright flavor.
- Storage: store leftover in an airtight container in the fridge for 1-2 days.
