- Olive oil - Using high-quality, extra-virgin olive oil will give you the best flavor in your dip.
- Lime juice - To get the most juice out of your lime, roll it around on the counter to loosen up the pulp before squeezing it. This will help you get as much juice as possible with each one.
- Fresh cilantro - Look for fresh cilantro that is bright green and has no yellow or wilted leaves. This will ensure the best flavor in your dishes.
- Fresh parsley - Look for parsley that is bright green with no yellow or wilted leaves.
- Lime zest - To get the most zest out of your lemon, use a microplane grater to scrape off only the very top layer of the rind.

- In your food processor, or using a hand mixer and a medium bowl, add ricotta, half the oil, lime juice and salt then process until light and creamy.
- Place in a serving bowl.
- In a small bowl, place fresh parsley, cilantro, lime zest, and the remaining half tablespoon of olive oil.
- Spread the herb mixture on top of the dip and serve with baguette slices or your favorite crackers.
