Ingredients

  • 12 (6inch) corn tortillas , preferably thin or uncooked
  • Cooking spray

For the spice mix:

  • 2 Tablespoons Nacho cheddar seasoning
  • 1 Tablespoon white cheddar powder
  • 1 Tablespoon dry ranch seasoning
  • ½ teaspoon smoked paprika

Optional:

  • 1 teaspoon nutritional yeast
  • Salt

Instructions

  • Heat oven to 350F.
  • Line two large baking sheet with foil and spray with oil spray.
  • In a small bowl combine all the spice mix together and set aside.
  • Fold each tortilla into quarter and cut in the middle to form 8 triangles.
  • Place triangles on the baking sheet and spray with oil.
  • Bake in the preheated oven for 7-8 minutes.
  • Sprinkle immediately with the spice mixture on both sides.

Notes

  • I do not recommend using flour tortillas in this recipe, they are too thick and do not give the desired taste.
  • I’ve used nacho cheddar and white cheddar popcorn seasoning in this recipe which made for a perfect mix. If this is not available, you can use finely grated parmesan cheese.
  • You can also use cheddar cheese powder, they are available online.
  • I did not add more salt to the spice mix as it is already salted but you can taste the mix before sprinkling it over the tortillas and adjust accordingly.
  • Nutritional yeast is not a must but it adds a savory cheesy flavor so if you have it go ahead and use some.
  • Other cooking methods:
    • Fry: Fill a large pot with about 2 inch oil and fry the wedges for a minutes until golden. Remove and sprinkle with the spices on each side while hot.
    • Air fryer: Air fry on 350F for 5-6 minutes and stay close to prevent burning. Sprinkle immediately while hot with spice mix.
  • Variations: Play with the recipe and come up with your own flavor mix. Popcorn flavors work great with this recipe so why not try other flavors.
  • Storage: Store chips in airtight container on your counter for up to two weeks.
