Quinoa stuffed chicken breasts

  • 3 Tablespoon olive oil.
  • 1/4 cup onion - chopped.
  • 1/3 cup quinoa uncooked rinsed well and drained,
  • 1/4 teaspoon salt.
  • *1/2 teaspoon freshly ground black pepper.
  • 1/3 cup water.
  • 1.5 lbs chicken tenders - approximately 9 pieces.
  • Salt and pepper to sprinkle on chicken.
  • 1 small red bell pepper- julienne.
  1. In a small sauce pan, heat the oil , add the onion and stir until fragrant.
  2. Add quinoa and stir for a minute, the add salt and pepper. Add water and bring to a boil, reduce heat, cover and simmer until all water is absorbed, remove from heat and let it cool down.
  3. Flatten the chicken tenders with a meat mallet, sprinkle with salt and pepper.
  4. Arrange some red pepper slices and spread about 2 tablespoon of the quinoa then roll the chicken.
  5. Place the chicken roll in a parchment paper and toll, secure ends, tuck them under and roll again in aluminum foil.
  6. Repeat until all the chicken is done. Place in an oven dish
  7. Bake in a 350F preheated oven for 20- 25minutes.
  8. You can enjoy the chicken now or unwrap and broil or grill.

Recipe Notes

I've used slightly more than 1 teaspoon of black pepper because we love black peppers a lot so if you can take it, then you are welcome to add more.
