Banana Bread Recipe without Butter

A deliciously fluffy banana bread that doesn't require a mixer or butter. A recipe suitable for beginners that comes out amazing from the first try.

Equipment

  • Blender
  • 9x5 loaf pan

Ingredients

  • 1 cup sugar 200g
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup oil
  • ¼ cup milk
  • 3 medium ripe bananas about 320g
  • all purpose flour 280g
  • 1 teaspoon ground cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • teaspoon salt

Instructions

  • Preheat oven to 350°F and grease a 9x5 loaf pan. Set aside.
  • In your blender add sugar, eggs, vanilla, oil, milk and peeled bananas. Mix Well.
  • In a mixing bowl sift together flour, cinnamon flour, baking soda, baking powder and salt.
  • Gradually pour the content of the blender and mix with a rubber spatula.
  • Pour batter into the prepared loaf pan and bake in teh center of your oven until a toothpick inserted in the middle comes out clean, about 45-50 minutes.
  • Let it cool down for 5 minutes in the pan before transferring it to a cooling rack.

Notes

  • You can use any light tasting oil you have, I like using avocado or light tasting olive oil.
  • You can add ½ cup of chocolate chips or ½ cup chopped nuts to the batter.
