Banana bread without butter is a delicious classic comfort food made healthier by using a light oil instead of a full stick of butter. This Banana bread recipe is made with easy ingredients that you probably already have in your pantry. After peeling bananas, blending them with eggs, flour, cinnamon and a handful of other ingredients, you will have a loaf of fresh homemade banana bread ready in less than an hour.

  • Sugar
  • Eggs - checkout vegan egg substitutions
  • Vanilla extract and ground cinnamon for flavoring
  • Oil - Use a light tasting oil like avocado oil, vegetable oil or canola oil.
  • Milk - Whole or low-fat milk
  • Bananas - best to use spotty bananas to add natural sweetness to your bread.
  • All-purpose flour - I used all-purpose flour but you can use whole wheat as well.
  • Baking powder - check that it is not expired.
  • Baking soda - always be sure the date is not yet expired for the best recipe results.
  • Salt

  1. Preheat oven to 350°F and grease a 9x5 loaf pan. Set aside. In your blender add sugar, eggs, vanilla, oil, milk and peeled bananas. Mix well.
  2. In a large mixing bowl sift together flour, cinnamon, baking soda, baking powder and salt.
  3. Gradually pour the wet ingredients to the dry ingredients and mix with a rubber spatula.
  4. Pour batter into the prepared loaf pan and bake in the center of your oven until it passes the toothpick test, about 45-50 minutes. Let it cool down for 5 minutes in the pan before transferring it to a cooling rack.

💡 Amira's Tips

  • You can use any light tasting oil you have, I like using avocado or light tasting olive oil.
  • You can add ½ cup chocolate chips or ½ cup chopped nuts to the batter.

🧺 Storage

Refrigerate - Wrap leftover banana bread in plastic wrap and place in an airtight container. Leave on counter for one or two days, refrigerate for longer.

Freeze - Completely cooled loaf can be wrapped in plastic wrap then aluminum foil and put in a freezer bag then freeze for up to 3 months. Individual slices can be double wrapped and frozen as well.

Can I use under ripen bananas?

Yes of course, any bananas will work but if bananas are ripe they do contain more natural sugars that make banana bread not only moist but also much more delicious.

How can I ripen bananas quickly?

Bananas can be stored in a brown bag to make them ripen faster, usually only a day or two.

Why did the middle of my banana bread cave in while baking?

There are many reasons why your banana bread caved in while cooking. A few things to check is that your oven is the right temperature, your ingredients are not expired, and that you are following the recipe exactly.

Ingredients

  • 1 cup sugar 200g
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup oil
  • ¼ cup milk
  • 3 medium ripe bananas about 320g
  • 2¼ all purpose flour 280g
  • 1 teaspoon ground cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ⅛ teaspoon salt

Instructions

  • Preheat oven to 350°F and grease a 9x5 loaf pan. Set aside.
  • In your blender add sugar, eggs, vanilla, oil, milk and peeled bananas. Mix Well.
  • In a mixing bowl sift together flour, cinnamon flour, baking soda, baking powder and salt.
  • Gradually pour the content of the blender and mix with a rubber spatula.
  • Pour batter into the prepared loaf pan and bake in teh center of your oven until a toothpick inserted in the middle comes out clean, about 45-50 minutes.
  • Let it cool down for 5 minutes in the pan before transferring it to a cooling rack.
