Pizza is always a family-favorite in our household. But, sometimes you just want something a little different. That's where this recipe stands out, it's a great way to add some different flavors to your meal plan, but still enjoy your pizza.

- Boneless skinless chicken breasts - You can also use boneless skinless chicken thighs if you prefer dark meat. Chicken tenderloins would also work, just remove the tendon first.
- Seasonings - You will need chili powder, cumin, paprika, garlic powder, and onion powder for the fajita marinade.
- Sugar - White or granulated sugar will add a hint of sweetness to help balance out citrus flavors.
- Lime juice - Fresh lime juice will give your marinade the best flavor, however, you can use bottled juice as well.
- Oil - Any neutral flavored oil will work, olive oil, vegetable oil, or even canola oil all work well.
- Vegetables - You will need yellow or red onion and red and green bell peppers.
- Salsa - Look for your favorite salsa, I prefer to use a smooth sauce instead of a chunky salsa, since you are using this in place of pizza sauce.
- Pizza dough - You can make homemade pizza dough, pick up a can of refrigerated, or even pick up some fresh dough from the bakery department at your local grocery store.
- Cheese - I used shredded Monterey cheese, however you can also use cheddar cheese, Colby jack cheese, Mexican cheese blend, or even mozzarella cheese. Use whatever type of cheese that you have on hand.

- Add the seasonings to a bowl and mix well. Add the chicken breasts and coat evenly with seasoning. Marinate for 30 minutes. In a large skillet cook chicken breasts and sear on both sides. Remove from heat and set aside.
- Add oil and cook onions and sliced bell peppers for a minute.
- Unroll the pizza dough, then bake for 7 minutes.
- Remove the pizza pan from the oven, spoon salsa, and distribute evenly on the crust. Arrange chicken and vegetables on top then sprinkle cheese on top. Bake for 11-15 minutes until the crust is dark and golden brown.

Storage - Store leftover pizza in an airtight container in the fridge for 2-3 days. A Ziploc bag works great for leftover pizza.
Freezing - Did you know that you can freeze leftover pizza? Place it in a freezer-safe bag in the freezer for up to three months. Thaw in the fridge overnight before reheating.
Reheating - In my experience the best way to reheat pizza is in the oven. Preheat the oven to 325 F degrees, place your pizza on the pan and reheat for 10-12 minutes or until warm all the way through.

⌛ Make Ahead
The crust of your pizza can become soggy if you make it too far ahead, so I recommend that you wait to assemble and bake your pizza when you are ready to serve it.
However, if you want to save a little time in the kitchen on a busy night, you can prep and cook the chicken ahead and store it in the fridge. Leftover chicken works great on pizza.

Chicken Fajita Pizza
Ingredients
- 1 pound boneless skinless chicken breast
- 1 teaspoon chili powder
- ½ teaspoon cumin
- ½ teaspoon paprika
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon sugar
- 2 Tablespoons lime juice
- 2 Tablespoons oil
- ½ onion thinly sliced
- ½ red bell pepper thinly sliced
- ½ green bell pepper thinly sliced
- ½ cup salsa use your favorite
- 1 12- inch pizza dough refrigerated or homemade
- 1 ½ cups Monterey cheese shredded
Instructions
- In a bowl add seasoning and mix well.
- Add chicken breasts and coat evenly with seasoning, marinate for 30 minutes.
- In a large skillet over medium high heat, heat one tablespoon of oil. Add chicken breasts and cook until crispy and browned, flip and brown the other side as well.
- Remove chicken from pan and add the other tablespoon of oil.
- Add onions, sliced bell peppers and cook for a minute.
- Cut chicken into ½ inch strips.
- Heat oven to 400F
- Pre bake your pizza dough for 7 minutes.
- Remove pizza pan from oven, spoon salsa and distribute evenly on the crust.
- Arrange chicken and vegetables on top then sprinkle cheese on top.
- Bake for 11-15 minutes until crust is dark and golden brown.
