- Chicken, I used boneless skinless chicken breasts. You can use chicken thighs or even cooked chicken.
- Potatoes of any kind will work. I used russet potatoes but you can even use red potatoes if this is all you have.
- Fresh broccoli.
- Cream of chicken soup, buy it from your grocery store or make a homemade cream of chicken soup.
- Garlic cloves: although I like using fresh minced garlic, you can also use garlic powder.
- Chicken broth and sour cream for a delicious creamy sauce.
- Olive oil
- Oregano: You can also use Italian seasoning. If you do not have any, check out this post for the best oregano substitutes.
- Salt and black pepper

- In a large mixing bowl, mix chicken, potatoes, broccoli, olive oil, garlic, oregano, salt and pepper. Spray a casserole dish with cooking spray and set aside.
- Pour cream of chicken soup, sour cream, chicken broth over and mix well.
- Spread the mixture in the prepared baking dish, sprinkle cheese on top, cover with aluminum foil, and bake for 25 minutes.
- Uncover and continue to bake for another 20-25 minutes until cheese melts and browned to your liking.

- 1 13x9 casserole dish
- 1 large bowl
Ingredients
- 1 pound boneless skinless chicken breast cut into cubes
- 1 pound potatoes cut into bite sized chunks
- 1 head broccoli cut into 2-3 bites
- 2 garlic cloves minced
- 2 Tablespoons olive oil
- 1 teaspoon dry oregano
- Salt and pepper to taste
- 1 cream of chicken soup 10.5 ounce can
- ½ cup sour cream
- ¼ cup chicken broth
- 2 cups cheddar cheese
Instructions
- Preheat oven to 375°F. Spray a 13x9 casserole with cooking oil and set aside.
- In a large bowl mix chicken, potatoes, broccoli, olive oil, garlic, oregano, salt and pepper.
- Pour cream of chicken soup, sour cream, chicken broth over and mix well.
- Spread mixture in the casserole dish, sprinkle cheese on top, cover and bake for 25 minutes.
