1 large bowl
- 1 pound boneless skinless chicken breast cut into cubes
- 1 pound potatoes cut into bite sized chunks
- 1 head broccoli cut into 2-3 bites
- 2 garlic cloves minced
- 2 Tablespoons olive oil
- 1 teaspoon dry oregano
- Salt and pepper to taste
- 1 cream of chicken soup or use 10.5 ounce can
- ½ cup sour cream
- ¼ cup chicken broth
- 2 cups cheddar cheese
Preheat oven to 375°F. Spray a 13x9 casserole with cooking oil and set aside.
In a large bowl mix chicken, potatoes, broccoli, olive oil, garlic, oregano, salt and pepper.
Pour cream of chicken soup, sour cream, chicken broth over and mix well.
Spread mixture in the casserole dish, sprinkle cheese on top, cover and bake for 25 minutes.
Uncover and continue to bake for another 20-25 minutes until cheese melts and browned to your liking.
