Beef and Potato Tacos

Beef and Potato Tacos combines the best of the two worlds, crispy potatoes and tacos. Warmly spiced ground beef with comforting crispy potatoes all wrapped in warm tortillas. Hearty and flavorful easy dinner or crowd pleaser.

Ingredients

  • 3 Tablespoons olive oil divided
  • 1 onion chopped
  • 2 pounds ground beef
  • 2 packets of Taco seasoning
  • cup salsa
  • 1 pound russet potatoes cut into cubes
  • Oil for frying
  • 10 tortillas

Topping:

  • Pico de Gallo
  • Guacamole
  • Sour cream
  • Shredded lettuce
  • Shredded cheese

Instructions

  • Fry the potatoes until golden and crisp, take them out on a plate lined with parchment paper and season with some salt.
  • Heat half the oil in a large skillet on medium heat and sauté onion until translucent.
  • Add ground beef and cook until no longer pink, drain excess fat if necessary.
  • Season ground beef with taco and pour the salsa over, mix well.
  • Let it cook for another 2 minutes then turn heat off.
  • Mix in the fried potatoes.

Assemble Tacos:

  • In another large skillet heat the remaining oil.
  • Place two tortillas so half of it is on the bottom and half the tortilla is leaning on the side of the skillet.
  • Spoon about 2 tablespoons shredded cheese top that with ¼ cup of the meat mixture and spread it on half of the tortilla, fold the other half over.
  • Fry for 1-2 minutes. Turn it over to the other side. And fry for another 2 minutes.
  • Serve topped with lettuce, red onions, avocado slices, sour cream and any taco fixes you like.
