- 1 pound carrots 450g washed peeled and shredded about 4 cups
- 1 cup + 2 tablespoons sugar 225g
- ½ - ¾ cup water
- 1 Tablespoon lime juice
For flavoring:
- 6 whole cloves or ¼ teaspoon ground
- 1 ½ teaspoon vanilla extract
Other flavoring options: ( Use any or a combinations of the following)
- 1 cinnamon stick or ½ teaspoon ground
- 3 cardamom pods
- 1 Tablespoon rose water or orange blossom water
- Lemon zest
- Orange zest
In a medium saucepan over medium heat add carrots, sugar, water and spices if using.
Mix well and stir often until it starts to boil.
Reduce heat to low and keep it simmering for about 15 minutes.
5 minutes before the end of cooking add lime juice and vanilla.
Turn heat off.
Using an immersion blender, blend the mixture to the desired consistency. I like blending half of the mixture for some texture.
Place in a clean, sterilized jar with a lid and refrigerate.
- Please note cinnamon, cloves, cardamom, orange zest or lemon zest should be added at the beginning of cooking. Vanilla extract, rose water and orange blossom should be added with the lime juice towards the end of cooking.
- If you used spices whole and not ground for flavoring, do not forget to fish them out before eating.
