- Carrots - I like to use whole fresh carrots because they have a better flavor, just make sure to wash and peel them before you shred them.
- Sugar - Granulated sugar is fine, but you can also use brown sugar for a deeper flavor.
- Water - This helps your jam come together but you can also use rose water or orange blossom water for more flavor.
- Lime juice - Freshly squeezed lime juice is preferred, but bottled works as well.
- Cloves - You can use whole or ground cloves. Cloves add a warm, earthy flavor to the jam.
- Vanilla extract - Use pure vanilla extract for the best flavor.
- Cinnamon - Ground cinnamon is best, but if you have cinnamon sticks, you can use those too! Just make sure to remove them before serving.
- Cardamom pods -This is an optional spice that you can use to give this jam a nice, slightly spicy kick.
- Lemon or orange zest - This adds a bright, citrusy flavor to the jam.

- In a medium saucepan over medium heat, add carrots, sugar, water, and spices. Mix well and stir often until it starts to boil.
- Reduce to medium low heat and keep it simmering for about 15 minutes. 5 minutes before the end of cooking, add lime juice and vanilla. Turn the heat off.
- Using an immersion blender, blend the mixture to the desired consistency. I like blending half of the mixture for some texture.
- Place in a clean, sterilized jar with a li. le it come to room temperature then refrigerate.
💡Amira's Tips
- I like using grated carrots and leave some as is, you can cut them into pieces as well if this is what you like.
- Any spices that you are adding to your jam such as cinnamon, cloves, cardamom, orange zest, or lemon zest should be added at the beginning of cooking.
- But flavorings such as vanilla extract, rose water and orange blossom should be added with the lime juice towards the end of cooking.
- Don't forget that if you are using whole spices instead of ground you will need to remove the spices before you blend your jam.
- If your jam is too thick, you can add a little water, lime or lemon juice to thin it out. Just be careful not to add too much as it will dilute the flavor.

Carrot Jam
Ingredients
- 1 pound carrots 450g washed peeled and shredded about 4 cups
- 1 cup + 2 tablespoons sugar 225g
- ½ - ¾ cup water
- 1 Tablespoon lime juice
For flavoring:
- 6 whole cloves or ¼ teaspoon ground
- 1 ½ teaspoon vanilla extract
Other flavoring options: ( Use any or a combinations of the following)
- 1 cinnamon stick or ½ teaspoon ground
- 3 cardamom pods
- 1 Tablespoon rose water or orange blossom water
- Lemon zest
- Orange zest
