- Carrot cake mix - dry cake mix will be used. Look for a cake mix box that is 15.25 ounces. Some brands have reduced their box sizes and you need a full-size box for this recipe.
- Baking powder - Extra baking powder helps to give the cake a little lift.
- Eggs - The eggs help to bind the ingredients together and add moisture to the cake.
- Vegetable oil - This is used instead of butter to give the cake a tender crumb. If you prefer, you can use melted coconut oil or another neutral oil.

- Preheat oven to 350F and line two large baking sheets with parchment paper. In a large bowl combine dry ingredients well.
- Pour in wet ingredients and mix with a wooden spoon or a spatula making sure to scrape sides of the bowl. You can also use a hand mixer on low speed.
- Using a 1 tablespoon cookie scoop from dough into balls and place them 1 inch apart on the cookie sheet.
- Bake in the center of your oven for 9-11 minutes. Let baked cookies cool on a wire rack.

- Lining your baking sheet with parchment paper this helps to prevent the bottom of the cookies from browning too much and becoming hard.
- Once you add the eggs and the oil to the cake batter be careful to not overmix. You want to mix until just combined so that you do not have tough cookies.
- I used a cookie scoop however you can use an ice cream or even just a tablespoon.
- If you are doing to dust your cookies with powdered sugar do so while they are warm.
- Want to use frosting instead? Wait until the cookies are completely cool before frosting.
